Diwal, or angel’s-wings shellfish, is explicitly associated with Roxas in the city’s food account. Talaba and chicken binakol are also named. Ask the venue which cooked dishes are available and what the billable serving contains before choosing a large shared meal.
Baybay has documented restaurants, but neither the seafood reputation nor the city dish list establishes today’s catch. Keep the recipe enquiry practical: ask about cooking, bones, shellfish and other ingredients, and avoid assuming talaba is meant to be eaten raw.
